Any recommendations on which Ultraman series I should be watching? Because I am thinking about getting into that franchise next.

If you want something easy to find, star with Ultraman Trigger or Ultraman Z, that episodes are in the Tsubaraya YouTube channel. If you want something more dark, go for Nexus. Tiga is a good starting point, and Dyna is pretty cool too.
If you want something Showa, Ultraman Leo is pretty dark.....
